Mary Bell was an avid gardner who was looking for an easy economical method of preserving surplus crops. She discovered dehydration with the electric food dryer. As dehydrated foods became a part of her family's diet her recipe collection grew. Her desire to share these ideas, along with a recognized need for more complete dehydration information, led to the writing of this book.
