The Dough Hook glide is a small plastic fish- shaped piece that fits over and on top of the shaft inside the bowl (see image).  It is actually placed between the gear nut on the top of the column of the bowl and the dough hook which mixes the flour and ingredients for making bread.  Its purpose is to stops dough from going down the shaft when mixing.  It also makes for easier clean up.  Sometimes dough or other mixtures can also go down the bowl's drive column when mixing a large batch of any recipe, and the Dough Glide will eliminate that.

The Dough Glide is most useful with the older Bosch Universal Plastic Bowl.  The drive shaft screws on the the bottom of the Universal Bowl and is not easily removed from the older bowl.  If dough continually gets down the shaft, the dough hook hub can blacken, and that is prevented by using the dough glide.

It can also be used with the Bosch Universal Plus Plastic Bowl.  It is not as important with the Universal Plus bowl, because the drive shaft can be quickly removed from the underside of the bowl making cleanout is easier. It can be used with any of the other bowls that have a column and a drive shaft as well and for the same purpose.  

(NOTE: It's important to remember that the Dough Glide must be removed before using the wire whips, the batter whisks or the cookie paddles because it would interfere with engagement of the whip-drive gears.)
